Sorrel Salad with Creamy Chive Dressing

2 Bunches of Sorrel, leaves chopped, stems diced

2 Bunches of Romaine, chopped

1/2 cup of Flat Leaf Parsley, stems removed

for salad dressing:

1/3 cup raw cashews

1 Tbsp Extra Virgin Olive Oil

1 Tbsp fresh Lemon juice

1 Tbsp Shallot, minced

1 Tbsp fresh Chives, finely chopped

1/4 tsp Himalayan Sea Salt


Combine fresh vegetables in a large bowl. Blend dressing ingredients in a blender or jar. Pour over salad. Toss and serve.
